A quick and easy delicious moist muffin
If there are two or three brown bananas sitting on your bench that everyone has suddenly decided are past the point of eating, this easy Banana Chocolate Chip Muffin recipe is a very good way to use them up.
These muffins are quick, simple and made with everyday ingredients. There’s no need for a mixer or anything fancy, which makes them perfect for those moments when you need something for the lunchboxes, smoko or the baking tin without creating half a kitchen’s worth of dishes.
And, of course, there are chocolate chips. Because if you’re trying to convince the kids that those spotty bananas they refused to eat yesterday are suddenly worth eating today, chocolate certainly helps.

The Best Bananas for Banana Muffins
The browner the banana, the better.
Overripe bananas are softer, sweeter and much easier to mash, making them ideal for baking. Those bananas covered in brown spots that nobody wants to eat are exactly the ones you want for this recipe.
If you have ripe bananas but don't have time to bake, pop them in the freezer. You can freeze them peeled in a container or reusable bag and have them ready for your next batch of banana muffins.
Quick and Easy Muffins
One of the things I love most about muffins is how quickly they come together.
Unlike a cake, there’s no creaming butter and sugar or waiting for anything to cool before icing it. Mix the wet and dry ingredients, fold through the chocolate chips and into the oven they go.
The trick with muffins is not to overmix them. Once the wet and dry ingredients come together, gently fold the mixture until it is just combined. A few little lumps are absolutely fine.

Perfect for Lunchboxes and Smoko
Banana and chocolate chip muffins are one of those reliable recipes that work just as well for a school lunchbox as they do alongside a cup of tea at smoko.
They're also great for the freezer. Once completely cool, freeze them in an airtight container or bag and pull them out as you need them. Pop a frozen muffin straight into a lunchbox in the morning and it should be thawed by the time it's ready to be eaten.
I like to reuse the bags the wraps come in. They have a re-sealable opening and are made from food grade plastic. Perfect for reusing!
You can also warm one briefly and serve it with a little butter if you happen to catch them while they're still fresh.

Banana and Chocolate – Always a Good Combination
You could certainly leave the chocolate chips out, but where's the fun in that?
The sweetness of ripe banana and little pockets of chocolate make these muffins feel like a treat while still putting those forgotten bananas on the bench to good use.

Easy Banana and Chocolate Chip Muffins
Ingredients
- 1 egg
- ½ cup neutral flavoured oil (a vegetable oil or canola oil)
- 1 teaspoon vanilla
- 1 cup milk
- 2 tablespoon of apple cider vinegar
- 2 bananas
- 1 cup of chocolate chips
- ½ cup sugar
- 2 cups self raising flour
Instructions
- Preheat your oven to 180 degrees fanbake
- Begin by adding the apple cider vinegar to the cup of milk and leave to turn sour and get chunky.
- Mash the bananas with a fork.
- Place all the wet ingredients, including the bananas and sour milk.
- Add the chocolate chips, sugar and flour to the mixing bowl and gently combine.
- Spoon equal amounts into muffin casings or a muffin tray.
- Place in the oven and cook for 25-30 minutes
