Cheese and Corn Savoury Muffins

A delicious savoury muffin that is super easy to make.

Delicious warm or cold. Served with butter or without. You make it suit you – enjoy!

Are you sick of making your usual savoury favourites.
Perhaps you usually like to make Pappy’s scones, my cheese scones or some delicious mouse traps. They are all great choices! But sometimes it’s fun to make something new. This recipe might be your new choice to add to your savoury rotation for smoko or morning tea at your house.

What do I need?

You will need;

1 large bowl
Measuring Cups
Measuring Spoons
Dough whisk or a wooden spoon

Plain flour
Baking powder
Baking soda
Flavoursome cheese (like Tasty or Colby)
Corn
Eggs
Oil
Milk
Parsley
Cayenne pepper (additional ingredient – not essential)
Paprika (additional ingredient – not essential)
Ham or bacon (additional ingredient – not essential)

What type of corn should I use?

You can use a drained can of corn kernels, or frozen corn.
Both will work perfectly well.
Do not use creamed corn.

How do I prepare my muffin tray?

If you are using a silicon muffin tray you will not need to grease it. Allow the muffins to cool for at least 10 minutes when you take them out of the oven before turning them upside down onto a cooling rack. They should just pop right out with a little tap on the bottom.

If you are using a metal tray use a pastry brush to paint a little melted butter or oil around each muffin hole.

Could I use paper muffin cases?

It is not advised to use the paper cases as the muffin doesn’t have a high oil content and the muffin will stick to the paper cases.

Do they freeze well?

They sure do!
Simply cook, cool and pop into an airtight container or reusable freezer bag. Simply take out as many as you need each morning and allow time for them to thaw. You could place them straight into your school lunches, or warm slightly and serve at home.

Could I use self raising flour?

You could – Just make sure to amend the recipe.
Use 2 cups of self raising flour and 1 tsp of baking powder (there will be no need to add the baking soda).

Cheese and Corn Savoury Muffins

A delicious savoury muffin

Materials

  • 300 grams plain flour (2 cups)
  • 3 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 200 grams cheese (use Tasty, Colby or a cheese with a strong flavour)
  • 1 cup corn (you can use drained canned corn or frozen kernels)
  • handful of chopped parsley
  • 125 ml oil (½ cup)

    (use a flavourless oil like vegetable or grapeseed oil)

  • 250 ml milk (1 cup)
  • 2 eggs

Additional Ingredients

  • ¼ tsp cayenne pepper
  • ¼ tsp paprika
  • ½ cup chopped ham or bacon

Instructions

  • Preheat the oven to 200℃ (390℉) and prepare your muffin tray. You will need to grease any non stick muffin tray.
  • Place all of the dry ingredients in a large bowl and combine (including the additional spices if you are using them).
  • Add the parsley and corn (add the ham/bacon too if you are using it).
  • Make a well in the middle and add the wet ingredients. Using smooth gentle movements, combine all of the ingredients.
  • Spoon into you prepared muffin tray and place in the oven for 20-25 minutes until golden brown.
  • Leave in the muffin tray for 10 minutes before turning out onto a wire rack to cool.
