A Warming Vegetable Soup

Nothing gets better than a warming, flavoursome and delicious vegetable soup.

You will want a good flavoursome broth to boost your soups flavour but also add extra nutritious goodies to your soup.
You can find my method for making a good stock broth here.
Alternatively you can use store bought broth or simply a store bought stock.

You will need:

Broth
Vegetable stock
Carrots
Pumpkin or Kumara (sweet potato)
Celery
Onion
Split peas
Red lentils
Barley or quinoa 
Salt and pepper

You can choose to make this using either of the two methods;

Stove Top
Simmer for one and half hours until the vegetables and split peas are soft.

Instant Pot
Pressure cook on the soup function (or 30 minutes).

Serve with crunchy bread to mop up the soup from the bottom and sides of your bowl.

A Warming Vegetable Soup

  • 1 litre Broth
  • 2 litres Vegetable Stock ((water and stock cubes work just as well))
  • 2 grated carrots
  • 1 cup grated pumpkin or kumara ((sweet potato))
  • 1 onion finely chopped or grated
  • ½ cup split green peas
  • ½ cup red lentils
  • ½ cup split yellow peas
  • ⅓ cup barley or quinoa

Instant Pot

  1. Measure how much broth you have.

    Use vegetable stock to bring the amount up to 3 litres.

  2. Add the vegetables and dried ingredients.

  3. Pressure cook on the soup function (or 30 minutes).

  4. Allow the steam to release naturally and use the keep warm function to keep your soup hot until you serve it.

  5. Season to taste with salt and pepper.

  6. Serve with chunky bread to mop up all the goodness.

Stove Top

  1. Measure how much broth you have.

    Use vegetable stock to bring the amount up to 3 litres.

  2. Add the vegetables and dried ingredients.

  3. Simmer until the split peas and vegetables are soft. About one and a half hours.

  4. Season to taste with plenty of salt and pepper.

  5. Serve with chunky bread to mop up all the goodness.
