Ingredients

Vegetable Stock
(water and stock cubes work just as well)

grated carrots

grated pumpkin or kumara
(sweet potato)

onion
finely chopped or grated

cup
split green peas
½
cup
red lentils
½
cup
split yellow peas

barley or quinoa
Instructions
Instant Pot
Measure how much broth you have.
Use vegetable stock to bring the amount up to 3 litres.
Add the vegetables and dried ingredients.
Pressure cook on the soup function (or 30 minutes).
Allow the steam to release naturally and use the keep warm function to keep your soup hot until you serve it.
Season to taste with salt and pepper.
Serve with chunky bread to mop up all the goodness.

Measure how much broth you have.
Use vegetable stock to bring the amount up to 3 litres.
Add the vegetables and dried ingredients.
Simmer until the split peas and vegetables are soft. About one and a half hours.
Season to taste with plenty of salt and pepper.
Serve with chunky bread to mop up all the goodness.
