A Warming Vegetable Soup
Nothing beats a flavoursome and delicious vegetable soup.

- 1 litre Broth
- 2 litres Vegetable Stock (water and stock cubes work just as well)
- 2 grated carrots
- 1 cup grated pumpkin or kumara (sweet potato)
- 1 onion finely chopped or grated
- ½ cup split green peas
- ½ cup red lentils
- ½ cup split yellow peas
- ⅓ cup barley or quinoa
Instant Pot
Measure how much broth you have.Use vegetable stock to bring the amount up to 3 litres. Add the vegetables and dried ingredients.
Pressure cook on the soup function (or 30 minutes).
Allow the steam to release naturally and use the keep warm function to keep your soup hot until you serve it.
Season to taste with salt and pepper.
Serve with chunky bread to mop up all the goodness.
