Burger Scrolls: A Big Mac-Inspired Smoko

Ingredients

Dough

  • 3 cups high grade flour (450 grams)
  • 3 tsp instant yeast or 1 ½ tsp of dried active yeast
  • ½ tsp salt
  • 1 tbsp honey or white sugar
  • 280 mls warm water 36℃ if you want to be precise
  • 3 tbsp olive oil

Beef (or Lamb) Mince

  • 250 grams of beef
  • Glug of oil
  • 2 Tbsp of brown sugar
  • 1/4 cup of soy
  • 2 cloves of crushed garlic

Burger Ingredients

  • 1/2 cup of tomato relish
  • 4 large gherkins finely chopped
  • 100 grams of colby or tasty cheese
  • Burger sauce amount to your tasting

Instructions

Making the Dough

  • You may choose to make it in your bread maker, in the cake mixer or by hand.
  • Bread Maker – choose the dough setting. It will kneed it and allow the dough to rise once.

    Cake mixer – place all the dough ingredients in the cake mixer with the dough hook attachment. Kneed until the dough is elastic and smooth. Cover with a damp tea towel and allow to rise in a warm spot.

    By Hand – Place all the ingredients in a large bowl and combine. Use clean hands to kneed the dough on a clean floured surface. Kneed until the dough is smooth and elastic. Place back into the bowl (cleaned and oiled) cover with a damp tea towel and allow to rise in a warm spot.
  • While the dough proves cook the mince

Cooking the Mince

  • Mix the brown sugar and soy sauce in a small bowl until the sugar dissolves.
  • Heat a pan over medium-high heat and add a good glug of oil.
  • Once the oil is hot, add the beef mince. Use a wooden spoon to break the mince apart as it cooks.
  • Cook until the beef is browned (about 5-7 minutes).
  • Push the browned beef to one side of the pan and add the crushed garlic to the other side.
  • Sauté the garlic in the oil for about 1 minute until fragrant, then mix it into the beef.
  • Pour the soy sauce and brown sugar mixture over the beef. Stir well to coat all the mince evenly.
  • Cook for 2-3 minutes, letting the flavours meld and the sauce thicken slightly.

Constructing the Burger Scrolls

  • Once the dough has risen once. Punch down with a clean hand and turn out onto a clean and floured surface.
Use a rolling pin to roll a rectangle shape (about 40cmx20cm).
Preheat your oven to 200℃
  • Spread an even layer of tomato relish over the dough. 
Sprinkle the cooked mince evenly on top, followed by the chopped gherkins and grated cheese.
  • Lastly top with burger sauce.
  • Tightly roll the dough up into one long sausage.
  • Divide into twelve equal pieces and place into a lined roasting dish, spaced slightly apart for expansion.
  • Bake for 20-25 minutes or until the scrolls are golden brown and cooked through.
