Mix the brown sugar and soy sauce in a small bowl until the sugar dissolves.
Heat a pan over medium-high heat and add a good glug of oil.
Once the oil is hot, add the beef mince. Use a wooden spoon to break the mince apart as it cooks.
Cook until the beef is browned (about 5-7 minutes).
Push the browned beef to one side of the pan and add the crushed garlic to the other side.
Sauté the garlic in the oil for about 1 minute until fragrant, then mix it into the beef.
Pour the soy sauce and brown sugar mixture over the beef. Stir well to coat all the mince evenly.
Cook for 2-3 minutes, letting the flavours meld and the sauce thicken slightly.
