Coffee and Walnut Slice
This quick no bake slice will wow you and your family.

Base
- 200 grams butter
- 395 grams condensed milk
- 60 mls strong coffee 1/4 cup
- 2 cups walnuts
- 500 grams crushed vanilla biscuits 2 packets of regular plain biscuits (nz brands)
Icing
- 2 cups sifted icing sugar
- 2 tbsp melted butter
- 60 mls strong coffee 1/4 cup
- chopped walnuts To sprinkle on top. Not essential.
Base
Melt together the butter and condensed milk in a large pot over a low heat on the stove top. You could use your microwave too.
Take off the heat and add the coffee.
Next add the walnuts (they do not need to be chopped), and crushed biscuits. Use your dough whisk to combine the ingredients.
Line your 22cm square tin and press the mixture in.
Use paper towels (triple thickness) to press down on the surface of the base mixture. This will create an even surface and soak up any excess butter.
Place in the fridge to set. While it chills prepare the icing.
Icing
Sift your icing sugar into a medium sized bowl
Add your melted butter and strong coffee, and stir until you have a smooth consistency.
If your icing is too runny add more icing sugar in small amounts until you get the consistency you want (tablespoon amounts at a time).
Use a platte knife to spread the icing over your base.
Add roughly chopped walnuts to the top for a more rustic look.
Return to the fridge to until chilled and set.
