Homemade Jellies

This is a great healthy alternative to store bought jellies and packet jelly.

Equipment

  • Kettle
  • Heatproof measuring jug
  • Measuring spoons
  • Whisk
  • Fridge

Ingredients
  

  • 500 mls boiling water
  • ¼-½ cup lemon cordial (see my recipe for Nancy's lemon cordial)
  • 2 tbsp powdered gelatine
  • raspberries (add your desired amount)

Instructions
 

  • Pour the cordial and boing water into a heat proof jug.
  • Carefully taste the liquid and decide if you would like to add more cordial. Add enough for your desired taste.
  • Sprinkle the powdwered gealtine over the cordial mixture and whisk until all the gelatine has been dissolved.
  • Place the raspberries (or fruit of choice) into the bottom of each of your jars or containers.
  • Pour the liquid over the top of the fruit.
  • Place the jellies in the fridge to set.
