Forgotten Fruit Muffins
Got wrinkly fruit in the fruit bowl or ripe fruit dropping from tree? Make these!

Muffin
- 1 egg
- ½ cup neutral flavoured oil (a vegetable oil or light olive oil)
- 1 tsp vanilla
- 1 cup yoghurt (any flavour will work)
- 1 cup chopped fruit
- 2 cups self raising flour
- ½ cup sugar
Muffin topping
- 1 pinch brown sugar (enough for each muffin)
- 1 pinch rolled oats (enough for each muffin)
- chopped walnuts (optional)
Preheat your oven to 180 degree fanbake
Place all the wet ingredients into a large bowl and mix.
Add the fruit.
Add the dry ingredients to the mixing bowl and gently combine.
Spoon equal amounts into muffin casings or a muffin tray.
Sprinkle equal amounts of brown sugar, rolled oats and chopped walnuts (optional) on each muffin.
Place in the oven and cook for 25-30 minutes
