Pre heat the oven to 180 degrees.
In a pot melt together the butter, brown sugar and castor sugar.
Use your dough whisk or a wooden spoon to combine all the ingredients.
Let the mixture cool before adding the dried fruit, self raising flour and the lightly beaten egg.
Pour into the lined dish and cook for 20 mins.
The top will be crunchy and the inside will be chewy.
Let it cool before cutting.
This stores well in an airtight container.
