Station Brownie

This is quite simply delicious - one piece is never enough.

Equipment

  • 1 Medium Sized Pot
  • 1 Dough whisk (or wooden spoon)
  • 1 Brownie tin (28cm x 18cm)

Ingredients
  

  • 125 grams butter
  • ¾ cup brown sugar
  • ¼ cup castor sugar
  • 225 grams dried fruit
  • 150 grams self raising flour
  • 1 egg (lightly beaten)

Instructions
 

  • Pre heat the oven to 180 degrees.
  • In a pot melt together the butter, brown sugar and castor sugar.
  • Use your dough whisk or a wooden spoon to combine all the ingredients.
  • Let the mixture cool before adding the dried fruit, self raising flour and the lightly beaten egg.
  • Pour into the lined dish and cook for 20 mins.
  • The top will be crunchy and the inside will be chewy. 
  • Let it cool before cutting.
  • This stores well in an airtight container.
